Lemon Zucchini Cookies
3/4 cup butter or margarine
3/4 cup sugar3/4 cup butter or margarine
1 egg
1 teaspoon or more grated lemon peel
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup shredded unpeeled zucchini
1 cup chopped walnuts (optional)
Lemon Frosting:
1 1/2 tablespoons lemon juice
1 cup powdered sugar
In large bowl or mixer cream butter and sugar until light.
Sift or stir flour, baking powder, and salt together.
Gradually add to creamed mixture and blend. Stir in zucchini and nuts.
Drop by teaspoon on greased cookie sheets. Bake at 375 degrees for 10 minutes or until lightly browned.
Make frosting by beating together the lemon juice and powdered sugar.
Cool and enjoy!

Looks yummy! I have tons of frozen zucchini, and I think I'll have try try this recipe sometime soon.
