Shepherd's Pie

Autumn's in the air! I love it when the weather starts to get a bit crisp because it means the return of comfort foods! Today's recipe is a super simple comfort food that requires things you probably already have sitting in your fridge and pantry. Yummy!

Start off by browning 1 1/2 pounds of ground beef or ground turkey. Season to taste. I really like using garlic salt and ground pepper.
Season away!
Now check out your pantry items: instant mashed potatoes (follow the instructions to make a serving for 8), one giant bottle of stewed tomatoes (or two store bought cans) drained, and two cans of green beans drained. It almost feels like cheating.
Evenly spread your browned meat on the bottom of a 9x13 inch casserole pan.
Pour your stewed tomatoes over the meat. Remember that these should be drained.
Spread them out evenly-covering the meat.
Now dump two drained cans of green beans on top.
Spread them over the top of the tomatoes.
Now take your mashed potatoes, and cover every thing up.
Yum!Sprinkle about 2 cups shredded medium cheddar cheese over the potatoes. Sprinkle the cheese with a little seasoned salt.
Bake at 350 degrees for 30 minutes, or until browned and bubbly.Enjoy the fact that dinner was a cinch, and that your tummy is about to be blessed with deliciousness!

Yummy! I love Shepherd's Pie. I have never added the tomatoes to mine, but next time I am going to. Have you tried the potato pearls from the church cannery? You'll never go back! They also carry them at the costco near where I live.
